Ingredients:

  • 1 standing rib roast (5-7 lb)
  • Kosher salt
  • Black pepper
  • 2 cloves garlic, thinly sliced
  • Fresh rosemary sprigs
  • Olive oil

Instructions:

Step 1: Remove Roast from Fridge and Season

Preheat your oven to 450°F. Remove the standing rib roast from the fridge 1-2 hours before cooking, allowing to come to room temperature.

Season roast generously with salt and pepper, rubbing entire surface with olive oil to create a crust. Place garlic slivers and rosemary sprigs in any seams or cracks within meat if desired.

Step 2: Roasting

Place the standing rib roast into a roasting pan bones-side-down. Place into the pre-heated oven and roast for 15 minutes.

After 15 minutes has elapsed time, reduce temperature to 325°F and continue to roast for another 15-20 minutes per pound. Use a meat thermometer to check internal temp of the steak – remove from oven when the temperature reaches 135°F for medium-rare or 140F-145°F for medium doneness.

Once the roast has finished cooking, let rest before carving—slice thick sections from the bone in portion, removing slices opposite to the grain.
