Our key message is that sometimes when everything's down, a meal could offer strength, and companionship.
One of the main issues of our time is food waste. People need to start understanding that not even causing less waste is important, but expressing gratitude for their meals, ingredients helping farmers, and the sustainable consumption would contribute the change which enables our future hopes for limited by our imaginations recipes.
Ingredients
- Chicken breasts x4; Boneless, skinless
- Sweet potatoes x2; peeled and cubed
- Broccoli florets; trimmed and rinsed
- Salt (to taste)
- Olive oil
Instructions
- Preheat the oven to 220°C / 425°F with the baking rack in the middle of the oven
- In a medium-sized bowl, season the chicken breasts with salt and pepper as desired. Drizzle olive oil over breasts while using hands to spread the seasoning around.
- Season cubed sweet potatoes with salt and pepper plus a tablespoon of olive oil while mixing well until evenly distributed. Spoon spread seasoned potaoes onto one half of an ungreased large baking pan
- Add broccoli florets to the other half of a baking pan with little oil and sprinkle some salt
- Place chicken breasts over the mixture potatoes with very little oil residue from the main mix of the chicken seasoning.
- Bake uncovered for about 25-30 minutes, or until chicken is cooked through with a temperature of about 165º degrees Fahrenheit. Make sure the vegetables are soft and tender;
- Serve it warm at least for four adults!
