- Add salt & pepper to the tray and mix everything around, ensuring butternut squash is fully coated. Roast in the oven for approximately 20 minutes.
- In a Le Creuset pot, heat 2 tbsp butter until melted, thereafter add onion and garlic. Cook them for roughly 5 minutes or until both have been softened and sizzled.
- Add the roasted butternut squash, either vegetable or chicken stock, and paprika to the Le Creuset pot. After bringing to boil, let it simmer over low heat for roughly 15 minutes afterwards.
- Blend till mixture appears completely smooth after having thoroughly Puree the butternut mixture using an immersion blender, electric mixer or a normal blender in controlled portions.
- Melt the additional tablespoon of butter over medium heat in Le Creuset. Add balsamic vinegar and then using medium-high heat until it reduces by half.
